Probaker - Common Questions and Troubleshooting

This article is for customers who own a Wilfa PROBAKER kitchen machine and need help with its features, operation, accessories, or common issues.

How do I make a warranty claim or submit a complaint?

If you need to make a complaint or use the warranty for your Wilfa product, you should always contact the store or retailer where you purchased the product. A complaint is a notification that the product has a defect covered by the warranty or consumer protection legislation.

Follow these steps:

  1. Contact the store or retailer where you purchased the product.

  2. Have your receipt or proof of purchase available.

  3. Describe the issue as clearly as possible.

  4. Follow the retailer’s instructions for further handling.

The retailer is responsible for assisting you with the complaint and may contact Wilfa if needed.

Why is the bowl loose after I attach it?

A loose PROBAKER bowl may be caused by a missing rubber ring, an incorrectly attached bowl, or grease or water between the bowl and the machine base.

To secure the bowl:

  1. Check that the rubber ring is fitted correctly underneath the bowl.

  2. Place the bowl on the machine base.

  3. Turn the bowl clockwise until it cannot be turned any further.

  4. If the bowl is still loose, remove it and clean the rubber ring and the machine base.

  5. Dry both surfaces before fitting the bowl again.

Why is the bowl difficult to attach?

A PROBAKER bowl may be difficult to attach if there is dirt or residue between the bowl and the machine base.

To make the bowl easier to attach:

  1. Remove the bowl from the machine.

  2. Clean the rubber ring underneath the bowl.

  3. Wipe the machine base with a damp cloth.

  4. Dry the surfaces before attaching the bowl again.

  5. Turn the bowl clockwise until it is securely locked.

Why does my PROBAKER stop while kneading?

PROBAKER may stop while kneading if the dough places too much load on the machine or if the motor becomes too warm. The overload protection system monitors the load and stops the machine if it becomes too high. The motor also has thermal protection, which switches the machine off if the motor temperature becomes too high.

If PROBAKER stops while kneading:

  1. Set the speed control to 0.

  2. Reduce the resistance of the dough by adding a small amount of liquid, removing some of the dough, or continuing at a lower speed.

  3. Unplug the machine.

  4. Allow the machine to cool for at least 30 minutes.

  5. Reconnect the machine and try again with a smaller or softer dough.

If the machine repeatedly stops with a dough quantity that is well within the recommended limit, the machine may need to be inspected by an authorised service partner. A previous service case found that repeated stopping with a moderate dough could indicate a fault in the motor protection system.

Why will my PROBAKER not start?

PROBAKER may not start if the power switch is off, the power cable is not connected correctly, the mixer head is not properly closed, or the motor has overheated.

Check the following:

  1. Make sure the power switch beside the power connection is in position I, which is the on position.

  2. Make sure the power cable is fully inserted into the machine and the wall socket.

  3. Lower the mixer head until it locks securely into place.

  4. If the machine has been used for a long time or with a heavy dough, unplug it and allow it to cool for at least 30 minutes.

  5. Reconnect the machine and try starting it again.

If the machine still does not start, please contact the retailer where you purchased it.

Why does the whisk touch the bottom of the bowl?

The PROBAKER whisk may touch the bottom of the bowl when there is too little mixture in the bowl. The double balloon whisks are designed to adjust their height according to the contents, so they may reach the bottom when the bowl contains only a very small amount.

Add more ingredients to the bowl and check whether the whisk continues to touch the bottom.

Why does my PROBAKER NXT leave flour or ingredients in the bowl?

PROBAKER NXT may leave flour or other ingredients in the bowl if the stainless-steel dough hook is positioned slightly too high. A hook that is mounted a few millimetres too high may have reduced contact with ingredients at the bottom of the bowl.

The hook height can be adjusted, but the adjustment should only be made according to Wilfa’s official hook-adjustment instructions. If you do not have access to these instructions, please contact Wilfa customer support before changing the hook position.

How can I knead dough with very high hydration?

High-hydration dough can be kneaded in PROBAKER by adding the water gradually or by allowing a longer kneading time. Hydration describes how much water a dough contains compared with the amount of flour. For example, 90 percent hydration means that the recipe contains 90 grams of water for every 100 grams of flour.

Option 1: Add the remaining water gradually

Adding the remaining water near the end of kneading can help the dough develop before it reaches its full hydration.

  1. Begin with approximately 70 to 75 percent of the recipe’s total water.

  2. Knead until the dough is almost fully developed.

  3. Gradually add the remaining water.

  4. Continue kneading until the dough comes together again.

The dough may appear to fall apart when the remaining water is added, but it should come together again as kneading continues.

Option 2: Add all ingredients at the beginning

Adding all ingredients at the beginning is also possible, but the dough may require a longer kneading time.

  1. Add all the ingredients to the bowl.

  2. Knead on speed 60.

  3. Continue kneading for approximately 20 to 25 minutes or longer, if necessary.

  4. Monitor the dough while it is kneading.

  5. Stop when the dough has come together and developed the desired structure.

Is movement of the bowl normal during kneading?

Some movement of the PROBAKER bowl can be normal during operation, but a knocking sound is not considered normal.

If the bowl moves and you hear knocking:

  1. Stop the machine.

  2. Check that the bowl is correctly locked in place.

  3. Check that the rubber ring underneath the bowl is present, clean, and dry.

  4. Remove the dough hook and briefly operate the machine without ingredients, if this can be done safely according to the user manual.

  5. If the knocking continues or the cause is unclear, contact the retailer customer support for an inspection.

What should I do if the machine makes a clicking sound?

A clicking sound may occur if the connection in the gearbox is not engaging correctly. In one reported case, the recommended first step was to raise and lower the mixer head several times to check whether the connection engaged correctly.

To check the mixer head:

  1. Turn the machine off.

  2. Raise the mixer head.

  3. Lower it again until it locks securely.

  4. Repeat this a few times.

  5. Start the machine and listen for the clicking sound.

If the sound continues, stop using the machine and contact the retailer.

What should I do if brown particles fall from the mixer head?

Brown particles from the PROBAKER mixer head may be dried dough residue, but hard particles resembling metal should be investigated. A small number of service cases have involved a defective bearing, which is a component that helps rotating parts move smoothly.

If you notice brown particles:

  1. Stop using the machine.

  2. Do not open the mixer head yourself.

  3. Take clear photographs of the particles.

  4. Describe whether the particles are soft, crumbly, hard, or metallic.

  5. Take a photograph of the rating label underneath the machine. The rating label contains the model and production information.

  6. Contact the retailer where you purchased the machine.

What should I do if my PROBAKER Timer shows an error code?

A PROBAKER Timer error code may indicate that the machine requires professional inspection or repair.

  • U03: This error is connected to the top cover or display and the calibration of the speed control. Customers experiencing U03 should be referred to an authorised service partner.

  • E3: This error may indicate a malfunction in the Hall sensor or the motor. A Hall sensor is an electronic component that detects the motor’s position or movement. The machine should be returned for after-sales inspection or repair.

Do not attempt to open or repair the machine yourself. Contact the retailer where you purchased the product and include the following:

  • Your PROBAKER model

  • The error code shown

  • A copy of your proof of purchase

  • A photograph of the rating label underneath the machine

  • A short description of what happened before the error appeared

What should I do if the coating on my dough hook is damaged?

A PROBAKER dough hook with peeling, flaking, or otherwise damaged coating should be exchanged. Contact your place of purchase to get help with a replacement part.

When contacting the retailer, include:

  • Photographs of the damaged area

  • A photograph of the rating label underneath the machine

  • Your proof of purchase
